Chicken and Broccoli Teriyaki
If you are in the mood for something simple, but delicious…then try this Chicken and Broccoli recipe. The best part of this recipe is that there are only7 ingredients!
What You Will Need:
- 1/2 garlic clove (minced)
- 1/2 red onion(medium size)
- 2-3 tablespoons of olive oil
- One medium to large chicken breast
- 1 mixed bag of frozen broccoli-cauliflower
- 1 cup of rice
- Teriyaki sauce
Step 1: Finely chop the garlic and onion. (Chef’s Tip: avoid crying while chopping onions by putting a little lemon juice on it first.)
Step 2: Turn the stove heat under a large frying panto medium low(use a Wok if you have one). Add about 2 to 3 tablespoons of olive oil, enough to coat the bottom of the pan. Then add the chopped garlic and onions. Let them sizzle for about 5 mins, stirring them occasionally.
Step 3: In a quart size pot, add 2 ½ cups of water plus a dash of salt, bring to a boil, then add 1 cup of white rice. Reduce heat to medium low and cover the pot. Always check the cooking instructions on your package of rice. Don’t be afraid to add more little water if rice is not cooked to your liking.
Step 4: Cut the chicken breast into bite size pieces, and place them in the frying pan with the garlic and onions. If needed, add a little more olive oil and stir for a little. Let the chicken cook on one side until slightly brown than flip the pieces to cook the other side. (about 3 minutes on each side)
Step 5: Cook broccoli and cauliflower according to package instructions, either on the stove or use your microwave. Then add them along with 1/4- 1/2 cup of Teriyaki Sauce to the pan with the chicken and stir for another 2 minutes. And then you are done.
To serve, put some rice in the middle of the plate, add the chicken mixture over the rice. Add a little soy sauce if you desire. Otherwise, voila!… you have a quick and tasty meal.
